Mike The 7.3 Is super How ever the 4R100 Tranny was not the best.
Im not saying you will have issues with the tranny Im just saying They had way more tranny problems then Engine problems. They pull well I would go with 4:10 gears if you were going to tow over 12-13K and I would Install a good tripple disk converter.
I just got the 6.0 Powerstroke With the 5 speed Torqueshift tranny and That tows great Better then my 7.3 that had a full all out moded tranny, Im getting 9.0 MPG towing My camper at 65 MPH I feel that is ok But I would like to see 10MPG. The camper is Big and heavy.
Just My 2.0 cents But the 6.0 and torqueshift will out pull the 7.3 and 4R100. But when it comes to reliability The 7.3 is real reliable.
After all that you dont no any more then before you read it LOL

Hang in there Dave it may be just breaking in. My Duramax started out just a shade over 9 mpg and now with 12000 mi (9000 towing) it is up to 10.5 driving same speed you are. Biggest jump came with 4 inch cat back exhaust, that gave me at least 0.5 mpg.
