We are noticing when the sink covers are on excessive condensaton forms on the bottom of the covers promoting the formation of mildew. This occurs even when the drains stoppers are in. Anyone else having this problem?

Welcome to the Cardinal RV Club!

We have not experienced that but we don't have near the amount of humidity as you have in Florida. Do you use any of the dehumidifier devices when you are not using the trailer?

This seems to occur weather the AC is on or the windows are open. Perhapse something to do with the solid countertop material.
We may have found a way to get water for a future desert exploration trip.

We have had that problem on occasion - we just solved it by not using the sink covers unless I am using the small one for cutting ( LABELED it as "Cutting side" or the larger one to "hide'' dishes that I have not had a chance to wash. Otherwise, I put a screw into the dividing wall between one side and the other under the sink and hang them there....
